• 9 eggs (preferably organic and free range)
• ½ cup cut up vegetables (e.g. tomatoes, peppers, spinach, mushrooms, brocolli)
• ½ cup diced ham or other protein (optional)
• 2 tbsp mct oil
• Salt and pepper to taste
1. Combine all ingredients in a mixing bowl, beating the eggs well.
2. Line a muffin tin with paper liners or spray with non-stick oil like avocado oil. Fill each tin ¾ full.
3. Bake in over for 10 mins on 400 degrees F or until the top of the egg mixture is firm. Store in the fridge or freeze individually and warm in microwave for a quick breakfast.
